Entomofagia: estudio preliminar sobre la percepción de los estudiantes de Zootecnia y Veterinaria en Brasil

Resumen

La investigación tiene como objetivo prospectar informaciones relacionadas a la percepción de estudiantes de Zootecnia y Veterinaria en Brasil sobre el uso y aceptación de insectos y sus subproductos en la alimentación animal y humana. Se realizó un estudio basado en preguntas objetivas en un formulario en línea diseñado para recopilar los datos necesarios, clasificado como descriptivo exploratorio transversal sobre el tema abordado. Se distribuyeron 432 respuestas entre las regiones de Brasil, a saber: Noreste (68,4%), Sureste (12,8%), Sur (11,4%), Norte (4,4%) y Medio Oeste (3%). Los resultados muestran que el 76,9% de los estudiantes conoce el uso de insectos en la alimentación humana y animal, pero sólo el 48,1% recomendaría la alimentación a base de insectos. A pesar de que el 84,3% no tiene entomofobia y conoce la entomofagia, sólo el 30,1% ingeriría un pan elaborado con harina de insectos y recomendaría el consumo de este tipo de ingrediente a otras personas. Finalmente, es pertinente inferir que el uso de insectos en la alimentación humana y animal, a pesar de ser conocido por este grupo muestral, aún es superficial y con varios paradigmas, que imposibilitan el uso efectivo. Se sugiere que la entomofagia sea incluida en los proyectos curriculares de los cursos de Zootecnia y Medicina Veterinaria, para que este conocimiento sea realmente una alternativa viable para la producción de proteína alternativa en Brasil.
